We are a proud family-owned and operated meat processing company that not only processes meat but also sells cooking essentials, our own products, and wine and beer. We have won numerous awards for our products and meat recipes. We are a fully USDA inspected facility, upon request we can slaughter and process your animals under Federal inspection.

Charlie and Kristi Emswiler bought the Wahoo Locker in November 1998. Charlie continued the tradition of sausage-making in Wahoo and the business has grown and expanded a lot over the years. In 2013 Josh Schommer joined the Emswilers as owners and the business was moved across the street to accommodate all of the growth that was happening. This created a new opportunity to have a much bigger retail store to showcase all of the wonderful products that the locker produces. Now a second-generation has begun working at the locker and learning the trade and we are excited about the future.

I don’t even know where to start with the Wahoo Locker. We have always processed our own deer but the last two years we’ve went thru you and it is such a breeze, it’s almost too easy! The end results are absolutely out of this world from the deer bacon to the Pepperjack summer sausage- we will never do our own processing again. Your Cajun bacon is to die for and you have the most wonderful staff. All around fantastic place!
